2 boneless, skinless chicken breasts, diced

8 oz (225g) penne pasta

1 cup cherry tomatoes, halved

8 oz (225g) fresh mozzarella balls, halved

2 cups fresh spinach

3 cloves garlic, minced

1/4 cup fresh basil, chopped (plus extra for garnish)

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper, to taste

1/2 teaspoon Italian seasoning

Red pepper flakes, optional (for heat)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Season the diced chicken breasts with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 6-7 minutes, or until fully cooked and no longer pink in the center. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds or until fragrant. Add the halved cherry tomatoes and cook for another 3-4 minutes, until they start to soften.

        Combine Ingredients: Return the cooked chicken to the skillet with the tomatoes. Add the cooked penne pasta, fresh spinach, and mozzarella balls. Gently toss to combine.

          Add Balsamic and Basil: Drizzle balsamic vinegar over the pasta mixture, then sprinkle in the chopped basil. Toss everything together until combined and the spinach wilts slightly (about 2 minutes).

            Season to Taste: Taste and adjust seasoning, adding more salt, pepper, or red pepper flakes based on your preference.
