2 (14.75 oz) cans of salmon, drained and flaked

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped onion

1/4 cup finely chopped celery

2 large eggs, beaten

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon paprika

3 tablespoons olive oil (for frying)

Prepare the Salmon Mixture: In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped celery, beaten eggs, parsley, Dijon mustard, lemon juice, garlic powder, black pepper, salt, and paprika. Mix gently until all ingredients are well incorporated.

    Shape the Patties: With your hands, form the mixture into medium-sized patties, about 2-3 inches in diameter. You should yield about 8-10 patties depending on the size you make.

      Chill (Optional): For a firmer texture, you can chill the formed patties in the refrigerator for 30 minutes. This step helps them hold together better while frying.
