Cajun Chicken Quesadillas

2 boneless, skinless chicken breasts

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1 cup diced bell peppers (red, yellow, and green)

1 small onion, diced

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 cup sour cream (for serving)

1/4 cup fresh cilantro, chopped (for garnish)

Salsa (optional, for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: Begin by seasoning the chicken breasts with the Cajun seasoning, ensuring they are evenly coated on all sides.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and allow it to rest for a few minutes.

      Sauté Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté until the vegetables are tender and slightly caramelized, about 5-6 minutes. Remove from heat.

        Shred the Chicken: While the vegetables are cooking, shred the cooked chicken using two forks or your hands.

          Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle half of the tortilla with a layer of cheddar and mozzarella cheese, followed by a layer of sautéed vegetables, shredded chicken, and then a generous sprinkle of cheese on top. Fold the tortilla in half to create a semi-circle.

            Cook the Quesadillas: Heat a non-stick skillet over medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted. You can cook two at a time depending on the size of your skillet.

              Slice and Serve: Remove the quesadilla from the skillet and allow it to cool slightly before slicing it into wedges. Garnish with fresh cilantro.
