Cajun Chicken Alfredo Pasta

12 oz fettuccine pasta

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1/2 cup fresh spinach, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Additional Cajun seasoning (optional for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Season the Chicken: While the pasta is cooking, season both sides of the chicken breasts with the Cajun seasoning, ensuring they are evenly coated.

      Cook the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes per side, or until the chicken is cooked through and has a nice golden crust. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

        Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring well to combine. Bring it to a simmer and then reduce the heat to low.

          Add Cheese & Vegetables: Gradually whisk in the grated Parmesan cheese until melted and smooth. Stir in the halved cherry tomatoes and chopped spinach. Cook for about 2-3 minutes until the spinach wilts.

            Combine Pasta & Sauce: Add the drained fettuccine to the skillet with the Alfredo sauce. Toss to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

              Finish and Serve: Slice the rested Cajun chicken and lay it over the pasta. Season with salt and pepper to taste. Garnish with fresh parsley and additional Cajun seasoning if desired. Serve immediately with extra Parmesan on the side.
