1 cup ricotta cheese

2 cups all-purpose flour (plus more for dusting)

1 egg

1 teaspoon salt

1/2 teaspoon nutmeg

1/4 teaspoon black pepper

1/2 cup unsalted butter

12 fresh sage leaves

Grated Parmesan cheese (for serving)

Freshly cracked black pepper (for garnish)

Prepare the Dough: In a large bowl, combine the pumpkin puree, ricotta cheese, egg, salt, nutmeg, and black pepper. Mix until smooth. Gradually add the flour, starting with 1 cup and then adding more as needed, until a soft, slightly sticky dough forms. Be careful not to overwork the dough, as this can make the gnocchi tough.

    Shape the Gnocchi: On a floured surface, divide the dough into four sections. Roll each section into a long rope about 1/2 inch in diameter. Cut the rope into 1-inch pieces. Use the tines of a fork to gently press down on each piece to create grooves, which will help hold the sauce later.

      Boil the Gnocchi: Bring a large pot of salted water to a boil. Carefully add the gnocchi in batches, ensuring not to overcrowd the pot.
