For the Gnocchi:

2 cups pumpkin puree (canned or homemade)

1 large egg

1 teaspoon salt

1/2 teaspoon freshly grated nutmeg

1/2 teaspoon black pepper

2 to 2.5 cups all-purpose flour (plus extra for dusting)

For the Butter Sage Sauce:

1/2 cup unsalted butter

10 fresh sage leaves

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Chopped walnuts or pecans (optional, for garnish)

Instructions
 

Make the Gnocchi Dough:

    - In a mixing bowl, combine the pumpkin puree, egg, salt, nutmeg, and black pepper. Mix until well blended.

      - Gradually incorporate the flour, starting with 2 cups. Stir until the dough comes together. If the dough is too sticky, add more flour, a little at a time, until it is soft but not overly sticky.

        Shape the Gnocchi:

          - Dust a clean surface with flour. Divide the dough into 4 portions. Roll each portion into a long rope, about 1/2 inch in diameter.

            - Cut the ropes into 1-inch pieces. If desired, use a fork to give each gnocchi a small indentation for catching sauce.

              Cook the Gnocchi:

                - Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking them until they float to the surface (about 2-3 minutes).

                  - Use a slotted spoon to transfer them to a plate. Repeat until all gnocchi are cooked.

                    Prepare the Butter Sage Sauce:

                      - In a large sauté pan, melt the butter over medium heat. Add the sage leaves and cook until the butter is golden brown and the sage is crispy, about 3-4 minutes. Be careful not to burn the butter.

                        - Once ready, season the sauce with salt and pepper to taste.

                          Combine Gnocchi and Sauce:

                            - Add the cooked gnocchi to the pan with the butter sage sauce. Gently toss to coat all the gnocchi in the buttery goodness. Allow them to cook together for about 2 minutes.

                              Serve:

                                - Remove from heat and transfer to plates. Sprinkle with freshly grated Parmesan cheese and chop walnuts or pecans over the top if desired.
