Buttery Pumpkin Muffins

1 cup canned or roasted pumpkin puree

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly with butter.

    Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.

      Add Eggs and Pumpkin: Mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Then, add the vanilla extract and pumpkin puree, mixing until smooth.

        Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until evenly combined.

          Blend Together: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; small lumps are okay. If desired, fold in the walnuts or pecans and chocolate chips for added flavor and texture.

            Fill the Muffin Tins: Spoon the batter into the prepared muffin cups, filling each about two-thirds full to allow for rising.

              Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
