Broccoli, Rice, Cheese, and Chicken Casserole

2 cups cooked white rice (can use brown rice or quinoa for a healthier option)

2 cups cooked chicken, diced (rotisserie chicken works great)

2 cups fresh broccoli florets (or 1 cup frozen)

2 cups sharp cheddar cheese, shredded

1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)

1 cup milk (whole, skim, or plant-based)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

½ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam or blanch the florets for about 2-3 minutes until slightly tender. If using frozen, simply thaw them.

      Mix the Ingredients:

        - In a large mixing bowl, combine the cooked rice, diced chicken, steamed broccoli, and 1.5 cups of cheddar cheese.

          - In another bowl, whisk together the cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt until well combined.

            Combine Mixtures: Pour the soup mixture over the rice mixture and stir until everything is evenly coated.

              Transfer to Casserole Dish: Grease a 9x13 inch casserole dish with cooking spray or olive oil. Pour the combined mixture into the dish, spreading it evenly.

                Add the Topping: If you’d like a crispy topping, combine the breadcrumbs with olive oil in a small bowl and mix until moistened. Sprinkle the breadcrumb mixture evenly over the casserole, followed by the remaining ½ cup of cheddar cheese.

                  Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, uncover and bake for an additional 15-20 minutes or until the cheese is melted and bubbly and the breadcrumbs are golden.

                    Cool and Serve: Once done, remove from the oven and let it cool for about 5-10 minutes before serving. This allows the casserole to set and makes it easier to serve.
