Ingredients
  

1 package (17.3 oz) of frozen puff pastry sheets (2 sheets), thawed

4 large eggs

½ cup milk

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup diced cooked ham or crispy bacon bits

½ cup finely chopped bell peppers (red, green, or yellow)

½ cup finely chopped onions

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon fresh parsley, chopped (for garnish)

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Cook the Vegetables: In a skillet, heat olive oil over medium heat. Add the chopped onions and bell peppers; sauté until softened, about 3-4 minutes. Remove from heat and set aside.

      Whisk the Eggs: In a mixing bowl, whisk together the eggs and milk. Season with salt and pepper to taste.

        Combine the Filling: In a large bowl, combine the sautéed vegetables, diced ham or bacon, and shredded cheese. Pour the egg mixture into this bowl and stir well until all ingredients are well mixed.

          Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheets to smooth them out. Cut each sheet into 6 equal rectangular pieces.

            Fill the Bars: Place about 2-3 tablespoons of the breakfast filling onto half of each puff pastry rectangle, leaving a small border around the edges. Fold the other half of the pastry over the filling and press the edges with a fork to seal.

              Apply Egg Wash: Beat the additional egg in a small bowl. Brush the top of each pastry bar with the egg wash to give them a beautiful golden finish.

                Bake: Arrange the stuffed puff pastry bars on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.

                  Garnish and Serve: Once baked, remove the bars from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving. Enjoy warm for a delightful breakfast treat!
