1 sheet of frozen puff pastry (thawed)

1 large egg (for egg wash)

1 tablespoon of coarse sugar (for topping)

8 oz (225g) cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 egg yolk

For the Blueberry Filling:

1 cup fresh blueberries (or frozen, thawed)

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1/2 teaspoon vanilla extract

For the Glaze (optional):

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Prepare the Cream Cheese Filling:

    - In a mixing bowl, beat the softened cream cheese until smooth.

      - Add the granulated sugar, vanilla extract, and egg yolk. Mix until well combined, then set aside.

        Make the Blueberry Filling:

          - In a small saucepan over medium heat, combine the blueberries, granulated sugar, lemon juice, cornstarch, and vanilla extract.

            - Cook for about 5-7 minutes until the mixture begins to thicken and bubble, stirring occasionally. Remove from heat and allow to cool slightly.

              Prepare the Puff Pastry:

                - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

                  - Roll out the thawed puff pastry sheet on a lightly floured surface into a 12x12 inch square. Cut into four equal squares.

                    Assemble the Danishes:

                      - On each square, lightly score a smaller square (about 1 inch from the edges) inside, being careful not to cut all the way through.

                        - Place about 2 tablespoons of the cream cheese mixture in the center of each square.

                          - Top the cream cheese with 1-2 tablespoons of the blueberry filling.
