Ingredients

2 cups fresh or frozen blueberries

2 cups cottage cheese (small curd)

1/2 cup rolled oats

1/4 cup maple syrup (or honey)

1/4 cup almond milk (or any milk of your choice)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

Pinch of salt

Optional: 1/4 cup chopped nuts (walnuts or almonds) for topping

Optional: Fresh mint leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish or a similar-sized oven-safe dish.

Mix Wet Ingredients: In a large bowl, combine the cottage cheese, maple syrup, almond milk, eggs, and vanilla extract. Whisk until smooth and well combined.

Combine Oats and Dry Ingredients: In a separate bowl, mix the rolled oats, baking powder, cinnamon, and salt. Stir until everything is evenly mixed.

Combine Mixtures: Gradually fold the dry mixture into the wet mixture until just combined. Be careful not to overmix.

Add Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Pour and Spread: Pour the mixture into your prepared baking dish. If desired, sprinkle the chopped nuts over the top for added crunch.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes or until the top is set and golden brown.

Cool and Serve: Once baked, remove the dish from the oven and allow it to cool for about 10 minutes. Slice into squares and serve warm or at room temperature. Garnish with fresh mint leaves for a touch of color and flavor.
