BLT Pasta Salad with Ranch

8 oz rotini pasta

6 strips of crispy bacon, chopped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup shredded cheddar cheese

1/4 cup red onion, finely chopped

1/2 cup ranch dressing

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water. Set aside.

    Prepare the Bacon: While the pasta cooks, fry the bacon in a skillet over medium heat until it becomes crispy. Once done, transfer it to a paper towel-lined plate to drain excess grease.

      Mix the Dressing: In a small bowl, whisk together the ranch dressing, mayonnaise, apple cider vinegar, and a pinch of salt and pepper until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, add the cooled pasta, chopped bacon, cherry tomatoes, chopped romaine lettuce, shredded cheddar cheese, and red onion.

          Dress the Salad: Pour the ranch dressing mixture over the pasta salad and gently toss until all ingredients are well combined and evenly coated with dressing.
