2 cups cooked chicken breast, diced (about 2 medium-sized breasts)

6 strips of bacon, cooked and crumbled

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup romaine lettuce, chopped

1/2 cup cooked corn (fresh, frozen, or canned)

1/4 cup red onion, finely diced

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon strips until crispy. Drain on paper towels and crumble once cooled. Set aside.

    Prep the Chicken: If you haven't done so already, dice the cooked chicken into bite-sized pieces.

      Mix the Dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Adjust seasoning to taste; set aside.

        Combine the Ingredients: In a large mixing bowl, combine the diced chicken, crumbled bacon, cherry tomatoes, avocado, romaine lettuce, cooked corn, and red onion.
