1 ½ cups Biscoff cookie crumbs

½ cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

½ cup granulated sugar

½ cup brown sugar, packed

1 teaspoon vanilla extract

2 large eggs

¾ cup Biscoff spread

Whipped cream (optional, for topping)

Extra Biscoff cookies (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Crust: In a medium bowl, combine the Biscoff cookie crumbs and melted butter. Mix until the crumbs are thoroughly coated. Press this mixture firmly into the bottom of the prepared baking pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the granulated sugar and brown sugar, continuing to beat until well combined. Scrape down the sides of the bowl as necessary.

        Add Vanilla and Eggs: Mix in the vanilla extract. Then, add the eggs one at a time, mixing on low speed just until combined after each addition.

          Incorporate Biscoff Spread: Gently fold in the Biscoff spread until fully blended with the cheesecake mixture. Avoid overmixing.

            Combine & Bake: Pour the cheesecake filling over the prepared crust in the baking pan, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until the edges appear set and the center has a slight jiggle.

              Cool & Chill: Remove the cheesecake bars from the oven and let them cool at room temperature for about 1 hour. Once cooled, transfer to the refrigerator and let them chill for at least 4 hours or overnight for the best texture.

                Serve: Once chilled, remove the cheesecake bars from the pan using the parchment overhang. Cut into squares. Serve with a dollop of whipped cream and garnish with extra Biscoff cookies if desired.
