Ingredients

1 cup mixed berries (strawberries, blueberries, raspberries)

2 cups vanilla pudding

1 cup heavy whipping cream

3 tablespoons powdered sugar

1 teaspoon vanilla extract

12 ladyfinger cookies or sponge cake pieces

Mint leaves for garnish (optional)

Instructions

Prepare the Berries: Rinse the mixed berries under cold water and gently pat them dry. If using strawberries, slice them into thin pieces for a beautiful layering effect.

Make the Whipped Cream: In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Use an electric mixer to whip until soft peaks form, about 3-5 minutes. Be careful not to overwhip!

      Layer the Trifle Cups:

        - Take a clear cup or glass and start with a layer of ladyfinger cookies or sponge cake at the bottom. If you prefer, you can lightly soak them in a splash of fruit juice or liqueur for added flavor.

          - Spoon a layer of vanilla pudding on top of the cookies, spreading it evenly.

            - Add a layer of mixed berries over the pudding, distributing them evenly.

              - Top with a generous amount of whipped cream.

Repeat Layers: Continue layering with the remaining ingredients, starting again with ladyfingers, then pudding, followed by berries and topped with whipped cream, until you reach the rim of the cup. Aim for at least three layers.

Garnish: Finish off your trifle cups with a few extra berries on top and a sprig of mint for a pop of color.

Chill: Refrigerate the trifle cups for at least 30 minutes to allow the flavors to meld and the dessert to set a little before serving.
