1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (optional)

Salsa or hot sauce, for serving

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Once it starts to brown, add the diced onion and minced garlic. Cook until the beef is fully browned and the onion is translucent, about 5-7 minutes.

    Season the Mixture: Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 1-2 minutes to let the spices blend with the beef.

      Combine Ingredients: Add the black beans and corn to the skillet. Stir in the cooked rice and mix everything together well. Cook for an additional 3-4 minutes until heated through. Remove from heat and set aside.

        Assemble the Burritos: Lay one tortilla on a flat surface. Spoon 1/4 of the beef mixture onto the center of the tortilla. Sprinkle 1/4 cup of the cheddar and Monterey Jack cheese on top. Carefully fold in the sides of the tortilla, then roll it from the bottom up to enclose the filling. Repeat with the remaining tortillas.

          Heat the Burritos: Preheat a large skillet or griddle over medium heat. Place the burritos seam-side down in the skillet and cook for about 3-4 minutes on each side, until they are golden brown and the cheese is melted.
