Beef Stir Fry with Noodles

1 lb (450g) beef sirloin, thinly sliced against the grain

8 oz (225g) egg noodles (or your choice of noodles)

2 tablespoons vegetable oil (divided)

2 bell peppers (one red and one yellow), thinly sliced

1 medium onion, thinly sliced

3 cloves garlic, minced

1 inch fresh ginger, grated

2 cups broccoli florets

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

1 teaspoon chili flakes (adjust to taste)

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Marinate the Beef: In a bowl, combine the thinly sliced beef with soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Allow it to marinate for about 15-20 minutes while you prepare the other ingredients.

      Prep the Vegetables: While the beef is marinating, prepare the vegetables. Slice the bell peppers and onion, mince the garlic, and grate the ginger.

        Sauté the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Once hot, add the marinated beef. Stir-fry for 2-3 minutes until the beef is browned and cooked through. Remove from the skillet and set aside.

          Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant. Then, add the sliced onions and bell peppers, stir-frying for 2 minutes. Finally, add the broccoli florets and continue to stir-fry for another 2-3 minutes until vegetables are tender-crisp.

            Combine Everything: Return the cooked beef to the skillet with the vegetables. Add the cooked noodles, sesame oil, chili flakes, and mix everything well. Stir-fry for an additional 2-3 minutes until everything is heated through and well combined.

              Serve: Remove from heat and serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.
