1 lb ground beef (preferably lean)

1 cup blueberries (fresh or frozen)

1/4 cup soy sauce

2 tbsp honey

1 tbsp rice vinegar

2 cloves garlic, minced

1 tsp fresh ginger, grated

1/4 tsp red pepper flakes (optional for heat)

1/4 cup scallions, chopped (plus extra for garnish)

1 cup shredded carrots

1/4 cup chopped cilantro

Salt and pepper to taste

1 head of butter lettuce or romaine lettuce (for wraps)

Lime wedges (for serving)

Instructions
 

Prepare the Blueberry Glaze:
