1 lb (450g) beef sirloin, thinly sliced

3 cups broccoli florets

1 medium carrot, thinly sliced

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper, to taste

Toasted sesame seeds, for garnish

Cooked rice or noodles, for serving

Instructions
 

Prepare the Beef: In a bowl, marinate the sliced beef with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and a dash of pepper. Let it sit for at least 15 minutes while you prep the vegetables.

    Blanch the Broccoli: In a large pot, bring salted water to a boil. Add the broccoli florets and blanch for about 2 minutes. Drain and immediately immerse them in ice water to retain their vibrant color and crunch. Set aside.

      Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in batches to avoid overcrowding. Stir-fry for 2-3 minutes until browned and cooked to your liking. Remove the beef from the skillet and set aside.

        Stir Fry the Vegetables: In the same skillet, add remaining vegetable oil and sauté the garlic and ginger for about 30 seconds until fragrant. Add the sliced carrot and cook for an additional 2 minutes. Then, toss in the blanched broccoli and stir-fry for another minute.

          Combine Ingredients: Return the cooked beef to the skillet with the vegetables. Pour in the remaining soy sauce, hoisin sauce, and sesame oil. Stir well to combine.

            Thicken the Sauce: Add the cornstarch-water mixture to the skillet, stirring continuously until the sauce thickens, about 1 minute. Adjust seasoning with salt and pepper if necessary.

              Serve: Remove from heat and garnish with toasted sesame seeds. Serve hot over cooked rice or noodles for a wholesome meal.
