Ingredients

2 cans young green jackfruit in water or brine (about 20 oz each)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup BBQ sauce (store-bought or homemade)

8 slider buns (preferably whole grain)

1 cup coleslaw mix (optional for serving)

Pickles (optional for garnish)

Instructions

Drain and Rinse the Jackfruit: Open the cans of jackfruit and drain the liquid. Rinse the jackfruit pieces under cold water to remove excess brine. Use your hands or a fork to shred the jackfruit into smaller pieces, removing any tough core pieces.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Season the Jackfruit: Add the shredded jackfruit to the skillet along with the smoked paprika, ground cumin, chili powder, salt, and black pepper. Mix well to coat the jackfruit with the spices.

Cook the Jackfruit: Pour in the BBQ sauce and stir to combine. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, stirring occasionally. The jackfruit should absorb the flavors and become tender.

Prepare the Sliders: While the jackfruit is cooking, preheat your oven to 350°F (175°C). If desired, lightly toast the slider buns in the oven for about 5 minutes until warm and slightly crispy.

Assemble the Sliders: Once the jackfruit is ready, take slider buns and generously spoon the BBQ jackfruit mixture onto the bottom half of each bun. If using, add a spoonful of coleslaw on top for crunch. Cover with the top half of the bun.

Serve: Serve the sliders warm with additional BBQ sauce on the side and pickles if desired.
