BBQ Chicken Zucchini Boats

4 medium zucchinis

1 cup cooked and shredded chicken breast

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheese (cheddar or a blend)

1/2 cup corn (canned or frozen, thawed)

1/4 cup red onion, diced

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Slice each zucchini in half lengthwise and scoop out the insides using a spoon, leaving about 1/4 inch of flesh in the skin to create a boat. Reserve the scooped-out flesh for later use.

      Cook the Filling: In a large mixing bowl, combine the shredded chicken, BBQ sauce, corn, diced red onion, garlic powder, salt, and pepper. Stir until well mixed.

        Add Zucchini Flesh: Chop the reserved zucchini flesh and add it to the chicken mixture. This adds moisture and flavor to the filling.
