Ingredients

1 pound boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

3 flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn (fresh, canned, or frozen)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and the chicken breasts. Cook for 5-7 minutes per side or until fully cooked (internal temperature should reach 165°F). Remove from the skillet and allow to rest for a few minutes.

Shred the Chicken: While the chicken rests, shred it with two forks and toss it with 3/4 cup of BBQ sauce in a bowl, ensuring the chicken is well-coated.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Flatbreads: On a baking sheet, lay out the flatbreads. Spread a thin layer of BBQ sauce (about 1 tablespoon) on each flatbread, avoiding the edges.

Assemble: Evenly distribute the shredded BBQ chicken over each flatbread. Top with mozzarella cheese, sliced red onion, and corn.

Bake: Bake the flatbreads in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread become slightly crispy.

Garnish: Remove from the oven and sprinkle with fresh cilantro for a burst of flavor.

Serve: Slice the flatbreads into quarters and serve warm. Enjoy your smoky BBQ chicken flatbread!
