2 cups Brussels sprouts, halved

1 large sweet potato, diced into 1-inch cubes

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

½ red onion, sliced

3 tablespoons olive oil

¼ cup balsamic vinegar

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 cup cooked quinoa (to serve)

Fresh basil or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare the Vegetables: In a large bowl, combine the Brussels sprouts, sweet potato, red bell pepper, cherry tomatoes, and red onion. Toss to combine.
