Ingredients

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup all-purpose flour

1 cup marinara sauce (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Wash the zucchinis and cut off the ends. Slice each zucchini into long sticks, about 1/4 to 1/2 inch thick.

Set Up a Breading Station: In three separate shallow dishes, place the flour, whisked eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.

Bread the Zucchini: First, dredge each zucchini stick in flour, coating it evenly. Then dip it into the egg mixture, allowing any excess to drip off. Finally, roll it in the breadcrumb mixture, pressing gently to ensure it adheres. Repeat this for all zucchini sticks.

Arrange for Baking: Place the breaded zucchini fries in a single layer on the prepared baking sheet. Lightly spray or drizzle them with cooking spray or olive oil for extra crunch.

Bake: Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

Heat the Marinara Sauce: While the zucchini fries are baking, heat the marinara sauce in a small saucepan over medium heat, stirring occasionally until warmed through.

Serve: Once the fries are ready, remove them from the oven and allow them to cool slightly. Serve them hot, garnished with chopped fresh parsley, alongside the warm marinara sauce for dipping.
