1 cup broccoli florets, steamed and chopped

1 cup carrots, grated

1 cup cooked quinoa

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup ground flaxseed mixed with 1/4 cup water (flax egg)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

2 tbsp olive oil (for drizzling)

Optional: 1/2 cup peas or corn for added texture

Instructions
 

Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.

    In a large bowl, combine the steamed broccoli, grated carrots, cooked quinoa, and optional peas or corn.

      In a separate bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it becomes gel-like.

        Add the flax egg to the vegetable mixture along with breadcrumbs, Parmesan cheese (or nutritional yeast), garlic powder, onion powder, paprika, salt, and pepper. Mix everything thoroughly until well combined. If the mixture feels too wet, add more breadcrumbs until you can easily form it into nuggets.

          Scoop out a tablespoon of the mixture and shape it into a nugget. Repeat until all the mixture has been shaped, then arrange the nuggets on the prepared baking sheet.

            Drizzle the nuggets lightly with olive oil for a crispier texture.

              Bake in the preheated oven for 20-25 minutes, flipping the nuggets halfway through, until they are golden brown and crispy.

                Remove from the oven and let them cool for a few minutes before serving. Enjoy them with your favorite dipping sauce, like ketchup, hummus, or ranch dressing!
