2 cups rolled oats

1 cup canned pumpkin puree

1/2 cup almond milk (or milk of choice)

1/2 cup maple syrup (adjust based on sweetness preference)

1/4 cup coconut oil, melted (or unsalted butter)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or chocolate chips (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper for easier removal.

    Mix Wet Ingredients: In a large bowl, whisk together the canned pumpkin puree, almond milk, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, baking powder, ground cinnamon, ground ginger, ground nutmeg, ground cloves, and salt. Stir gently to ensure all the dry ingredients are evenly distributed.

        Combine Everything: Gradually add the dry oat mixture to the wet mixture, stirring until just combined. If using, fold in the chopped nuts and dried fruits or chocolate chips.
