Baked Pimento Cheese Chicken Wraps

2 cups cooked chicken, shredded

1 cup pimento cheese (store-bought or homemade)

4 large flour tortillas

1 cup fresh spinach leaves

1/2 cup sliced bell peppers (red, green, or a mix)

1/4 cup diced red onion

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup shredded mozzarella cheese (optional for topping)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Mix Filling: In a large mixing bowl, combine the shredded chicken, pimento cheese, garlic powder, black pepper, spinach, bell peppers, and red onion. Mix until well combined.

      Assemble Wraps: Lay out a tortilla on a clean surface. Place about 1/4 of the chicken mixture in the center of the tortilla. Fold the sides in and then roll it from the bottom up to secure the filling. Repeat with the remaining tortillas and filling.

        Prepare Baking Dish: Lightly grease a baking dish with olive oil. Place the wraps seam-side down in the dish.

          Add Cheese Topping: If using mozzarella cheese, sprinkle it generously over the tops of the wraps for an extra cheesy finish.

            Bake: Cover the dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the wraps are heated through and the tops are golden and bubbling.
