Baked Pesto Pasta with Cherry Tomatoes and Mozzarella

12 oz (340g) pasta (penne or fusilli recommended)

1 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

8 oz (225g) mozzarella balls, halved (or shredded mozzarella)

1/2 cup grated Parmesan cheese

1/4 cup extra virgin olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1/4 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook for about 2 minutes less than the package instructions for al dente texture. Drain and set aside.

      Prepare the Sauce: In a large mixing bowl, combine the cooked pasta, basil pesto, halved cherry tomatoes, mozzarella balls, minced garlic, olive oil, salt, pepper, and red pepper flakes (if using). Toss everything together until well combined.

        Transfer to Baking Dish: Pour the pasta mixture into a lightly greased 9x13 inch (23x33 cm) baking dish, spreading the mixture evenly.

          Top with Cheese: Sprinkle the grated Parmesan cheese evenly over the top of the pasta.

            Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving hot.
