Ingredients

4 salmon fillets (skin-on or skinless)

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

2 tablespoons fresh parsley, finely chopped

1 teaspoon lemon zest

2 garlic cloves, minced

2 tablespoons Dijon mustard

2 tablespoons olive oil

Salt and pepper to taste

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Topping: In a mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, chopped parsley, lemon zest, minced garlic, and a pinch of salt and pepper. Mix well until all ingredients are evenly coated.

Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper. Place the fillets on the prepared baking sheet, skin side down if applicable.

Apply Mustard: Brush a thin layer of Dijon mustard evenly over the top of each salmon fillet. This will help the topping adhere and add flavor.

Add the Crunch: Generously spoon the Parmesan and panko mixture over each salmon fillet, pressing it down lightly to ensure it sticks well.

Drizzle with Olive Oil: Drizzle olive oil over the coated fillets to promote browning and crispiness during baking.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown and crispy. Check for doneness by testing with a fork; salmon should flake easily.

Serve: Remove from the oven and let rest for a minute. Serve hot with lemon wedges on the side for an extra zing!
