Ingredients

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

¼ teaspoon salt

2 cups milk (dairy or non-dairy)

1 large egg

¼ cup maple syrup or honey

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen, such as blueberries, strawberries, and raspberries)

Optional toppings: chopped nuts, shredded coconut, or a dollop of yogurt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with silicone liners.

Combine Dry Ingredients: In a large bowl, mix together the rolled oats, baking powder, cinnamon, and salt until evenly combined.

Mix Wet Ingredients: In a separate bowl, whisk together the milk, egg, maple syrup (or honey), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry oat mixture and stir until just combined. Fold in the mixed berries gently, ensuring an even distribution.

Fill Muffin Tin: Evenly distribute the oat mixture into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle nuts or coconut on top for extra crunch.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and a toothpick inserted comes out clean.

Cool and Serve: Remove the pan from the oven and let the oatmeal cups cool for a few minutes before carefully removing them from the tin. Serve warm or store in an airtight container for up to 5 days.

Enjoy Your Creation: These Baked Oatmeal Cups are perfect for breakfast on the go or a delightful snack! Add a dollop of yogurt or a drizzle of maple syrup for added sweetness if desired.
