Ingredients

8 chicken drumsticks

4 tablespoons olive oil

Zest of 1 lemon

Juice of 2 lemons

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature will help achieve a crispy skin on the drumsticks.

Prepare Marinade: In a large mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, smoked paprika, salt, black pepper, and red pepper flakes. Whisk together until well combined.

Marinate the Drumsticks: Add the chicken drumsticks to the marinade, ensuring they are well coated. For the best flavor, let them marinate in the refrigerator for at least 30 minutes to 2 hours. If you're in a hurry, you can skip this step, although marinating is recommended.

Line a Baking Sheet: Line a large baking sheet with aluminum foil for easier cleanup, and place a wire rack on top. This will allow the heat to circulate around the chicken, promoting even cooking.

Arrange the Drumsticks: Remove the drumsticks from the marinade and shake off any excess. Place them on the prepared wire rack, leaving space between each piece for proper air circulation.

Bake: Bake in the preheated oven for about 35-40 minutes, or until the drumsticks are golden brown and the internal temperature reaches 165°F (74°C). To achieve extra crispiness, you can broil them for the last 2-3 minutes—just keep an eye on them to prevent burning.

Garnish and Serve: Once done, remove from the oven, let rest for a few minutes, and then garnish with freshly chopped parsley. Serve hot with your favorite side dishes like roasted vegetables or a light salad.
