Ingredients

4 (6 oz) salmon fillets, skin-on

1 bunch of fresh asparagus, trimmed

4 cloves garlic, minced

2 medium lemons (1 for juice, 1 for slices)

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper.

Marinate the Salmon: Place the salmon fillets in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the salmon to coat. Allow it to marinate in the refrigerator for at least 15 minutes, or up to 1 hour for more intense flavor.

Prepare the Asparagus: While the salmon is marinating, place the trimmed asparagus on a rimmed baking sheet. Drizzle with the remaining marinade, season with salt and pepper, and toss until well coated.

Arrange on Baking Sheet: Remove salmon from the marinade and place the fillets, skin-side down, on the baking sheet alongside the asparagus. Arrange lemon slices on top of each salmon fillet for added flavor.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley, and serve immediately. Enjoy with additional lemon wedges on the side!
