Ingredients

4 boneless, skinless chicken breasts

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

2 tablespoons apple cider vinegar

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Make the Marinade: In a medium bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, dried thyme, paprika, salt, and black pepper until well combined.

Prepare the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the honey mustard marinade over the chicken. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

Arrange for Baking: Once marinated, remove the chicken from the marinade and place it in a baking dish. Reserve the leftover marinade.

Bake the Chicken: Bake the chicken in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink in the center.

Glaze the Chicken: In the last 5 minutes of baking, brush the reserved marinade over the chicken for an extra glaze.

Let it Rest: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute.

Serve: Garnish with fresh parsley and serve with your choice of sides, such as roasted vegetables or rice. Enjoy!
