Baked Falafel Zucchini Sliders

Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1 medium zucchini, grated and excess moisture squeezed out

1/4 cup chopped fresh parsley

1/4 cup chopped green onions

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon tahini

1 tablespoon olive oil

1/2 cup breadcrumbs (gluten-free if desired)

Whole grain slider buns

Toppings: sliced tomatoes, lettuce, avocado, and tahini sauce for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Chickpeas: In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth but still a bit chunky.

      Combine Ingredients: Add the grated zucchini, parsley, green onions, garlic, cumin, coriander, paprika, salt, pepper, tahini, olive oil, and breadcrumbs to the mashed chickpeas. Mix until well combined. The mixture should be sticky and hold together when formed into a patty. If it’s too wet, add a bit more breadcrumbs.

        Shape the Sliders: Using your hands, form the mixture into small patties, about the size of your slider buns. You should get around 10-12 sliders depending on the size.

          Bake the Sliders: Place the formed patties on the prepared baking sheet. Lightly brush or spray the tops with olive oil. Bake for 20-25 minutes, flipping them halfway through, until they are golden brown and firm.

            Assemble the Sliders: Once baked, remove the sliders from the oven and allow them to cool slightly. While they are cooling, you can toast the slider buns if desired.

              Serve: Place each falafel slider on a bun and top with your choice of sliced tomatoes, lettuce, avocado, and a drizzle of tahini sauce. Serve immediately and enjoy!
