6 large eggs

1 cup milk (or plant-based milk)

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1 cup diced bell peppers (mixed colors for visual appeal)

1 cup diced tomatoes (fresh or canned)

½ cup sliced green onions

1 cup black beans (cooked or canned, drained and rinsed)

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and black pepper to taste

4 large flour or corn tortillas

Olive oil or non-stick cooking spray

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Whisk the Eggs: In a large mixing bowl, whisk together the eggs, milk, cumin, smoked paprika, salt, and pepper until well combined.

      Prepare the Vegetables: Stir in the diced bell peppers, tomatoes, green onions, and black beans into the egg mixture. Mix well to ensure the vegetables are evenly distributed.

        Prepare the Tortillas: Lightly grease a 9x13 inch baking dish with olive oil or non-stick cooking spray. Lay two tortillas flat at the bottom, overlapping slightly. You can trim them if needed to fit the dish.
