Baked Cinnamon Raisin French Toast

1 loaf (12-14 slices) of cinnamon-raisin bread

6 large eggs

1 cup whole milk

1 cup heavy cream

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

Pinch of salt

1 cup raisins (optional, for added sweetness)

2 tablespoons unsalted butter, melted

Prepare the Bread: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. Slice the cinnamon-raisin bread into thick slices about 1-inch wide and arrange half of them in a single layer in the prepared dish. If your bread has crusts, feel free to trim them off, but it’s not necessary! If using additional raisins, sprinkle a portion on top of the first layer of bread.

    Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt until well combined.

      Assemble: Pour half of the egg mixture evenly over the first layer of bread. Add the remaining slices of bread on top and pour the rest of the egg mixture over this second layer, ensuring all pieces are well soaked. Use your fingers to gently press the bread down into the custard mixture. If desired, sprinkle the remaining raisins on top.

        Soak: Cover the dish with plastic wrap and refrigerate for at least 30 minutes, allowing the bread to soak up the custard. For best results, soak overnight in the refrigerator.
