Baked BBQ Chicken Thighs with Sweet Potatoes

4 bone-in, skin-on chicken thighs

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

For the Sweet Potatoes:

2 large sweet potatoes, peeled and diced into 1-inch cubes

2 tablespoons maple syrup

1 tablespoon olive oil

½ teaspoon cinnamon

¼ teaspoon salt

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken Marinade: In a mixing bowl, combine the BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Reserve ½ cup of the marinade for later.

      Marinate the Chicken: Place the chicken thighs in a large zip-top bag or a mixing bowl. Pour the remaining marinade over the chicken, ensuring it's well coated. Seal the bag or cover the bowl, then refrigerate for at least 30 minutes (up to 24 hours for more flavor).

        Prepare the Sweet Potatoes: In a separate bowl, combine the diced sweet potatoes, maple syrup, olive oil, cinnamon, and salt. Toss well to coat.

          Arrange in a Baking Dish: In a large baking dish, arrange the marinated chicken thighs skin-side up. Evenly spread the maple-glazed sweet potatoes around the chicken.
