Baked BBQ Chicken Drumsticks and Sweet Potatoes

8 chicken drumsticks

1 cup BBQ sauce (your choice of flavor)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

For the Sweet Potatoes:

4 medium sweet potatoes, peeled and cut into wedges

2 tablespoons olive oil

1 teaspoon cinnamon

½ teaspoon nutmeg

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Your Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Chicken Marinade: In a large mixing bowl, combine 1 cup of BBQ sauce, 2 tablespoons of olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt. Mix thoroughly to create a marinade.

      Coat the Drumsticks: Add the chicken drumsticks to the bowl and coat them well with the marinade. It’s best to let the chicken marinate for at least 15-30 minutes at room temperature to absorb the flavors (or overnight in the fridge for enhanced taste).

        Prepare the Sweet Potatoes: In another large mixing bowl, toss the sweet potato wedges with 2 tablespoons of olive oil, cinnamon, nutmeg, salt, and pepper until evenly coated.

          Arrange on a Baking Sheet: Line a large baking sheet with parchment paper. Arrange the marinated drumsticks on one half of the baking sheet, ensuring they are spaced out evenly. Place the sweet potato wedges on the other half in a single layer.

            Bake: Put the baking sheet in the preheated oven. Bake for 35-40 minutes, flipping the chicken and stirring the sweet potatoes halfway through for even cooking. The chicken is done when it reaches an internal temperature of 165°F (74°C) and has a nice caramelized glaze. Sweet potatoes should be tender and slightly crispy on the edges.
