Bacon-Wrapped Chicken with Honey Glaze

4 boneless, skinless chicken breasts

8 slices of thick-cut bacon

½ cup honey

2 tablespoons Dijon mustard

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and season both sides with garlic powder, smoked paprika, and black pepper.

    Wrap in Bacon: Take two slices of bacon for each chicken breast. Starting at one end, wrap the bacon around the chicken, overlapping the slices slightly as you go. Secure the ends with toothpicks if necessary.

      Make the Honey Glaze: In a small bowl, whisk together honey, Dijon mustard, soy sauce, and apple cider vinegar until well combined. Set aside.

        Bake the Chicken: Place the bacon-wrapped chicken breasts in a baking dish. Brush half of the honey glaze over the top of each chicken breast. Bake in the preheated oven for 25 minutes.

          Glaze and Broil: After 25 minutes, remove the chicken from the oven and brush the remaining honey glaze on top. Switch the oven to broil and return the chicken to the oven. Broil for 3-5 minutes or until the bacon is crispy and caramelized. Keep an eye on it to avoid burning.

            Serve: Once done, remove from the oven and let rest for 5 minutes. Garnish with chopped parsley and serve warm with your choice of sides.
