Bacon Ranch Pasta Salad

This dish features a delicious mix of farfalle pasta, crispy bacon, fresh vegetables, and sharp cheddar cheese, all enveloped in a creamy ranch dressing. Ingredients
  

12 oz farfalle pasta (bowtie pasta)

6 strips of bacon, cooked and crumbled

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup sharp cheddar cheese, cubed

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup green onions, sliced

3/4 cup ranch dressing

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the farfalle pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prep the Veggies and Bacon: While the pasta cools, cook the bacon in a skillet until crispy. Remove from the pan, let it drain on paper towels, and crumble it once it's cool enough to handle. Chop the cherry tomatoes, cucumber, red bell pepper, red onion, and slice the green onions.

      Mix the Dressing: In a large bowl, whisk together the ranch dressing, mayonnaise, apple cider vinegar, and a pinch of salt and pepper until well combined.

        Combine Ingredients: In the bowl with the dressing, add the cooled pasta, crumbled bacon, cherry tomatoes, cucumber, cheddar cheese, red bell pepper, red onion, and green onions. Gently toss together until everything is well coated with the dressing.

          Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to let the flavors meld. Just before serving, give it another good stir, taste and adjust seasoning if necessary. Garnish with fresh parsley if desired.
