Bacon and Spinach Egg White Muffins

6 large egg whites

1 cup fresh spinach, chopped

4 slices of cooked bacon, crumbled

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

1/4 cup milk (or non-dairy alternative)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or a little olive oil to prevent sticking.

    Prepare Ingredients: In a mixing bowl, whisk together the egg whites and milk until well combined. Sprinkle in the garlic powder, onion powder, salt, and pepper, mixing thoroughly.

      Add Vegetables and Bacon: Fold in the chopped spinach, crumbled bacon, cherry tomato halves, and feta cheese (if using) into the egg white mixture. Stir gently to combine all the ingredients.

        Fill Muffin Tin: Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg whites are set and slightly golden around the edges.

            Cool and Serve: Remove the muffin tin from the oven and let it cool for about 5 minutes before carefully removing the muffins. Use a knife to gently loosen the edges if needed.

              Enjoy: Serve warm or allow them to cool completely before storing in an airtight container. These muffins can be reheated in the microwave for a quick breakfast option on the go!
