2 cups cooked rice (preferably day-old for best texture)

1 cup mixed vegetables (carrots, peas, corn, bell peppers)

2 large eggs, beaten

2 green onions, finely chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon ginger, minced

Salt and pepper to taste

Optional: 1 cup cooked protein (chicken, shrimp, or tofu)

Instructions
 

Preparation: Start by preparing all ingredients. If using day-old rice, break up clumps. Chop vegetables and green onions, mince garlic and ginger, and beat the eggs in a bowl.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing until fragrant (about 30 seconds).

      Add Vegetables: Toss in the mixed vegetables and cook for 2-3 minutes until they start to soften. If you're using any cooked protein, add it at this stage and stir to warm through.

        Scramble the Eggs: Push the vegetable mixture to one side of the pan. Pour the beaten eggs into the cleared space and scramble them until fully cooked. Once done, mix the eggs with the vegetables.

          Combine Rice: Add the cooked rice to the skillet. Pour in the soy sauce and sesame oil, stirring everything together until well combined and heated through. Season with salt and pepper to taste.

            Garnish: Remove from heat and fold in the chopped green onions.

              Serve: Plate the fried rice and enjoy a nutritious meal that can be packed as leftovers or served hot!
