Ingredients

1 lb ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet chili seasoning mix (or homemade if preferred)

1 cup shredded cheddar cheese

8 taco shells (soft or hard, based on preference)

1 cup lettuce, shredded

1 cup sour cream

1 avocado, sliced

1/2 cup diced onion

Fresh cilantro, for garnish

Optional: sliced jalapeƱos for added heat

Instructions

Cook the Meat: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, breaking it up with a spatula as it cooks. Drain any excess fat.

Add Beans and Tomatoes: Stir in the kidney beans, black beans, and diced tomatoes with green chilies. Mix well.

Season the Chili: Sprinkle the chili seasoning over the meat and bean mixture. Stir until the seasoning is fully incorporated and let it simmer for about 10 minutes to allow the flavors to meld together.

Prepare Taco Shells: While the chili is simmering, preheat your oven according to the taco shell package instructions (if using hard shells). Arrange the taco shells on a baking tray and warm them in the oven, following package directions.

Assemble Tacos: Once the chili is cooked and the taco shells are warm, start assembling your tacos. Spoon the chili mixture into each taco shell, filling them generously.

Add Toppings: Top each taco with shredded lettuce, a sprinkle of cheddar cheese, diced onion, a dollop of sour cream, and slices of avocado. Garnish with fresh cilantro and jalapeƱos if using.

Serve: Enjoy the tacos while they're warm! These are perfect for a quick school night dinner or as a fun after-school snack.
