Ingredients
  

2 large tortillas or wraps

2 cooked chicken breasts, shredded

1 medium ripe avocado

1 cup fresh basil leaves

¼ cup grated Parmesan cheese

2 cloves garlic, minced

¼ cup olive oil

Juice of 1 lemon

Salt and pepper to taste

1 cup mixed salad greens (spinach, arugula, etc.)

Optional: cherry tomatoes, halved, for garnish

Prepare the Avocado Pesto: In a food processor, combine the avocado, basil leaves, Parmesan cheese, garlic, lemon juice, olive oil, salt, and pepper. Pulse until smooth and creamy. You may adjust the consistency by adding more olive oil or a splash of water if necessary.

    Assemble the Wraps: Lay the tortillas flat on a clean surface. Spread a generous amount of the avocado pesto on each tortilla, leaving about an inch of border around the edges.

      Layer the Ingredients: Place shredded chicken in the center of each tortilla. Add a handful of mixed salad greens on top of the chicken. If using, sprinkle halved cherry tomatoes over the greens for an added burst of flavor.

        Wrap it Up: Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to the top, ensuring the fillings stay inside. You should end up with a nice, tight wrap.
