Avocado Chicken Quesadillas

2 cups cooked chicken, shredded (leftover rotisserie chicken works great)

1 ripe avocado, mashed

1 cup shredded Monterey Jack cheese (or cheddar cheese)

1/2 cup diced tomatoes (fresh or canned)

1/4 cup chopped fresh cilantro

1 tsp lime juice

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

4 large flour tortillas

2 tbsp olive oil (for cooking)

Optional: Sour cream and salsa for serving

Prepare the Filling: In a mixing bowl, combine the shredded chicken, mashed avocado, diced tomatoes, cilantro, lime juice, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

    Assemble the Quesadillas: Place one tortilla on a clean surface. Spread a generous portion of the chicken-avocado mixture evenly over one half of the tortilla. Sprinkle with shredded cheese, then fold the other half over to create a semi-circle.

      Cook the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once hot, carefully add one of the folded quesadillas to the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy. Flip and cook the other side for an additional 3-4 minutes.

        Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

          Slice and Serve: Once all quesadillas are cooked, slice them into wedges. Serve warm with sour cream and salsa on the side for dipping.
