Avocado Chicken Quesadilla Melts

2 large chicken breasts, cooked and shredded

1 ripe avocado, mashed

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 small red onion, finely chopped

1 bell pepper (red, yellow, or green), diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, mashed avocado, nacho cheese, cumin, paprika, salt, and pepper. Mix well until all the ingredients are well coated.

    Cook the Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped red onion and diced bell pepper. Sauté for about 5-7 minutes or until the vegetables are soft. Add the minced garlic and cook for an additional minute until fragrant.

      Combine: Add the sautéed vegetables into the chicken mixture and combine thoroughly. This adds a delightful crunch to the creamy filling.

        Assemble the Quesadillas: Heat a clean skillet over medium-low heat. Place one flour tortilla in the skillet and spread about 1/4 of the chicken and avocado mixture over half of the tortilla. Sprinkle a generous amount of Monterey Jack and cheddar cheese on top. Fold the tortilla over to create a half-moon shape.

          Cook: Cook the quesadilla for about 3-4 minutes on one side, until golden brown and crispy. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side, ensuring the cheese melts completely and the tortilla is evenly browned.

            Repeat: Repeat steps 4 and 5 with the remaining tortillas and filling.

              Serve: Remove the quesadillas from the skillet and cut them into wedges. Garnish with fresh cilantro and serve hot with sour cream and salsa on the side.
