Authentic Jamaican Curry Chicken

2 lbs chicken, cut into pieces (bone-in for more flavor)

2 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

1 teaspoon salt (to taste)

½ teaspoon black pepper

2 tablespoons vegetable oil

1 large onion, chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

2-3 Scotch bonnet peppers, whole (adjust for heat preference)

2 medium carrots, sliced

1 red bell pepper, chopped

2-3 sprigs of fresh thyme or 1 teaspoon dried thyme

1 can (14 oz) coconut milk

1 cup chicken broth

2 green onions, chopped

Juice of 1 lime

Marinade the Chicken: In a large bowl, combine the chicken pieces with the Jamaican curry powder, allspice, salt, and black pepper. Mix thoroughly, ensuring the chicken is well-coated. Allow to marinate for at least 1 hour (or overnight in the refrigerator for more flavor).

    Sauté Aromatics: Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

      Brown the Chicken: Increase the heat to medium-high and add the marinated chicken pieces to the pot, including any remaining seasoning. Brown the chicken on all sides for about 5-7 minutes.

        Add Vegetables: Once browned, add the sliced carrots, chopped bell pepper, and whole Scotch bonnet peppers (do not cut them unless you want extra heat). Stir well to combine.

          Simmer the Curry: Pour in the coconut milk and chicken broth. Add thyme and green onions. Stir everything together, and bring to a gentle simmer. Cover the pot and reduce the heat to low. Cook for about 30-40 minutes, or until the chicken is tender and cooked through.

            Finish with Lime: Before serving, squeeze the lime juice over the curry for a fresh, zesty flavor. Remove the Scotch bonnet peppers at this point if you prefer a milder dish.

              Serve: Serve the Authentic Jamaican Curry Chicken hot, accompanied by fluffy white rice, rice and peas, or fried dumplings. Garnish with additional chopped green onions if desired.
