1 tablespoon olive oil

1 tablespoon red wine vinegar

Pita bread (4-6 pieces)

Sliced tomatoes

Fresh parsley or shredded lettuce

Marinate the Chicken: In a large bowl, combine the minced garlic, olive oil, red wine vinegar, oregano, ground cumin, paprika, salt, and pepper. Add the chicken thighs and toss to coat well. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Prepare the Tzatziki Sauce: While the chicken is marinating, make the tzatziki sauce. In a bowl, combine the Greek yogurt, grated cucumber (make sure to squeeze out excess water), minced garlic, dill, olive oil, red wine vinegar, and salt. Mix until well combined.
