Ingredients

2 cups shredded green cabbage

1 cup shredded red cabbage

1 cup grated carrots

1 cup cooked chicken, shredded (rotisserie chicken works great)

1/2 cup green onions, finely sliced

1/2 cup fresh cilantro, chopped

1/4 cup sliced almonds (for crunch)

1/4 cup sesame seeds

For the Dressing:

1/4 cup soy sauce (or tamari for gluten-free)

3 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 tablespoon sriracha (or adjust for heat)

1 teaspoon fresh ginger, grated

1 clove garlic, minced

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, and sliced green onions. Toss to mix well.

Add the Chicken: Add the shredded cooked chicken to the vegetable mixture. If you’re using rotisserie chicken, make sure to remove skin and bones, then shred the meat with fork or fingers.

Make the Dressing: In a separate small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), sriracha, grated ginger, and minced garlic until well combined.

Combine Everything: Pour the dressing over the slaw mixture. Toss thoroughly to ensure all ingredients are well coated with the dressing. Adjust seasoning according to your taste.

Final Touches: Garnish the slaw with chopped cilantro, sliced almonds, and sesame seeds for that extra crunch and flavor.

Chill and Serve: Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 20-30 minutes to allow the flavors to meld. Serve chilled as a side dish or a light meal.
