2 cups rolled oats

1 cup finely chopped walnuts

1 cup finely chopped dried apples

1/2 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1/2 cup grated fresh apple (about 1 medium apple)

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy lifting later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped walnuts, chopped dried apples, ground cinnamon, and salt. Stir until well incorporated.

      Combine Wet Ingredients: In a separate bowl, mix together the honey (or maple syrup), almond butter, grated fresh apple, and vanilla extract. Stir until the mixture is smooth and well-blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, and mix thoroughly. If you're adding mini chocolate chips, fold them in at this stage.

          Transfer to Baking Pan: Spread the mixture evenly into the prepared baking pan, pressing it down firmly with a spatula or your hands to ensure it holds together.

            Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center feels set.

              Cool and Cut: Remove from the oven and allow to cool in the pan for about 10 minutes. Using the parchment overhang, lift the bars from the pan and let them cool completely on a wire rack. Once cool, cut into squares or bars.
